Ingredients:

°1-2 hearts romaine lettuce, cutting to strips

°1 can (15.25 ounces) black beans, rinsed and drained

°2 c cherry tomatoes,

°1 c sharp cheddar cheese

°1 avocado, cut into cubes, drizzled with lemon juice

°1 red capsicum cut into cubes

°1 hot pepper, seeded, minced

°1/2 red onion, diced

°1/3 cup finely chopped fresh cilantro

°1 cup of mayonnaise

°1/2 cup barbecue sauce

°1/4 cup hot brown mustard

°2 tablespoons Worcestershire sauce

°2 tablespoons of lemon juice

Preparation:

In a medium bowl, whisk together mayonnaise, BBQ sauce, mustard, Worcestershire sauce, and lemon juice until smooth and set aside.

Placing romaine lettuce slices in  bowl, then top with the corn, beans, tomatoes, cheese, avocado, bell peppers, jalapenos, red onions, & cilantro.

Pour into the sauce and toss to combine.

Leaving for 15-20 mn before serve, to give flavors a chance to develop. Enjoy!
