My dears, today I’m delighted to share a dish with you that’s as comforting as a quilt stitched by grandma – my very own Beef Burrito Casserole. This dish is a hearty mélange of classic flavors, perfect for bringing everyone together around the dinner table for a taste of home. While burritos have their roots in the south, they’ve found a special place in our Midwestern hearts. Now, some may say that turning a burrito into a casserole isn’t traditional, but that’s just how we do things around here – it’s our way of serving up love in a dish, with every bite as delightful as the last.

Beef Burrito Casserole Recipe

Servings: 6 to 8

Ingredients:

1 lb ground beef

1 medium yellow onion, chopped

1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can corn, drained

1 (4 oz) can diced green chilis

2 cups cooked rice

2 cups shredded cheddar cheese

1 cup red enchilada sauce

1 (1.25 oz) packet taco seasoning

6 large flour tortillas

Salt and pepper to taste

Optional garnishes: sour cream, sliced green onions, chopped tomatoes

Preparation:

Preheat the oven to 350°F. Grease a 9×13 inch baking dish.

In a skillet, cook the ground beef and onion until the meat is browned and the onion is translucent. Season with salt and pepper, then drain excess grease.

Mix in taco seasoning, black beans, corn, green chilis, and cooked rice. Let it simmer for 5 minutes.

Lay out tortillas, divide the beef mixture among them, and top with cheese. Roll them up and place in the baking dish, seam-side down.

Pour enchilada sauce over the tortillas and top with remaining cheese.

Bake for 20-25 minutes until the cheese is bubbly and tortillas are golden brown.

Let it rest before serving, then garnish as desired.
