PINEAPPLE CRUNCHY

Ingredients:

2 eggs
100 g (½ cup) sugar
125 g (½ cup) yogurt
60 ml (¼ cup) vegetable oil
2 ml (½ teaspoon) vanilla extract
16 g baking powder
50 g (¼ cup + 3 tablespoons) Cornstarch
170 g (1 ⅜ cup) 00 Flour
6 slices of canned pineapple

Preparation:

1. Preheat the oven to 180 °C.
2. Butter 6 baking tins with a diameter of 11 cm.
3.In a large bowl, whisk the eggs with sugar and vanilla. Add vegetable oil and yogurt.
4. Sift flour, cornstarch and baking powder separately.
5.Mix the wet and dry ingredients.
6. Pour the mixture into the prepared form and sprinkle with the pineapple slices. Let cook for 25 minutes.
